Pulque or so-called octli is thick beverage with low alcohol content, color of milk. This drink made from fermented sap of maguey plants. The production is similar to the beverage from Indonesia, the legend, which originated from Lontar Siwalan or fruit. Maguey, Agave americana cactus species, also known as the Century plant (Century Plant) can be found almost in every corner of Mexico with its geography is varied and sometimes uneven ground contours. This plant is widely used in medicine and industry.

Pulque is a native drink of Mexico, long time ago is a sacred beverage Meso American society and its use is limited to a particular social class. After the Spanish conquest of Mexico, it became secular and the level of consumption increases. The popularity of these beverages reaches its peak in the 19th century. In the 20th century, his popularity declined, mainly because of competition from beer, which became more popular since the arrival of European immigrants.

Currently, several attempts were made to restore the popularity of this drink through tourism.
